Method
Preparing the Spice Blend
Make Spice Blend
In a small bowl, combine the cinnamon stick, cardamom pods, cloves, ginger, and black peppercorns. Using a mortar and pestle, crush the spices gently to release their essential oils.
Brewing the Tea
Boil Water
In a saucepan, bring 4 cups of water to a rolling boil.
Add Tea and Spices
Once the water is boiling, add the black Assam tea leaves and the prepared spice blend. Reduce heat and let it simmer for 5 minutes.
Strain the Tea
After 5 minutes, strain the tea mixture into a separate pot to remove the tea leaves and spices.
Adding Milk

Spiking the Chai
If desired, add 1 oz of spiced rum into the chai mixture, stir well, and heat through for another minute.
Serving
Serve Hot or Iced
Pour the Desi Chai into cups and serve hot. For iced chai, let the tea cool down, then pour over ice in a glass.
