Prepare the Watermelon

Begin by cutting the watermelon into small cubes. Measure out 2 cups of the cubed watermelon and set aside.

Muddle the Mint

In a cocktail shaker, add the fresh mint leaves and gently muddle them with the back of a spoon to release their oils.

Combine Ingredients

Add the cubed watermelon to the shaker along with the bourbon, lime juice, and honey. Fill the shaker with ice.

Shake

Seal the shaker and shake vigorously for about 15 seconds to combine all the ingredients and chill the mixture.

Serving

Strain and Serve

Strain the mixture into a chilled glass filled with ice. The watermelon and mint should create a refreshing look.

Garnish

Garnish your nightcap with fresh mint sprigs and a wedge of watermelon on the rim of the glass.
