Method
Meatloaf Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C).
Cook the Bacon
In a skillet over medium heat, cook the smoked bacon until crispy. Remove and allow to drain on paper towels.
Mix the Meatloaf Ingredients
In a large bowl, combine ground beef, ground pork, sautéed onion and garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, salt, black pepper, and dried thyme. Mix until well combined.
Form the Meatloaf
Shape the meat mixture into a loaf and place it in a baking dish.
Wrap with Bacon
Wrap the prepared meatloaf with the crispy bacon slices, overlapping them slightly.
Bake the Meatloaf
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
Dinner Sides Preparation
Prepare Green Beans
While the meatloaf is baking, bring a pot of salted water to a boil. Add the trimmed green beans and cook for 4-5 minutes until tender but still crisp. Drain and set aside.
Serve
Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with the green beans and mashed potatoes.
