Method

Cake

1

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.

2

Mix Dry Ingredients

In a medium bowl, sift together the flour, baking powder, salt, and lavender buds.

3

Cream Butter and Sugar

In a large bowl, cream the butter and granulated sugar together until light and fluffy.

4

Add Eggs and Honey

Beat in the eggs one at a time, then mix in the honey until well combined.

5

Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

6

Bake the Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

7

Cool the Cake

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Honey Meringues

8

Prepare the Meringues

Preheat the oven to 200°F (90°C). Line a baking sheet with parchment paper.

9

Whip Egg Whites

In a clean bowl, beat the egg whites until soft peaks form.

10

Add Honey

Gradually add the honey while continuing to beat until stiff peaks form.

11

Add Vanilla

Beat in the vanilla extract until fully incorporated.

12

Pipe Meringues

Spoon or pipe the meringue mixture onto the prepared baking sheet.

13

Bake Meringues

Bake for 1.5 to 2 hours, until the meringues are crisp and can be easily lifted off the parchment.

Beeswax Ice Cream

14

Prepare the Ice Cream Base

In a saucepan, combine heavy cream, whole milk, honey, and a pinch of salt. Heat over medium heat until warm.

15

Add Beeswax

Stir in the beeswax until melted and fully incorporated into the mixture.

16

Chill the Mixture

Remove from heat and let the mixture cool to room temperature. Then refrigerate for at least 2 hours.

17

Churn Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

18

Freeze

Transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.

Lavender Blackberries

19

Prepare the Blackberries

In a bowl, combine blackberries with lavender syrup, gently tossing to coat. Let sit for 10 minutes.
