Preparation of Ingredients
Prepare the Nettles
If using fresh nettles, wear gloves and rinse them under cold water. Blanch in boiling water for 1-2 minutes, then transfer to ice water to stop cooking. Drain and chop finely. If using dried nettles, simply rehydrate them in hot water for about 10 minutes, drain and chop.
Grate the Cheese
Grate the Pleasant Ridge cheese finely and set aside.
Making the Gnocchi
Combine Ingredients
In a large mixing bowl, combine the mashed potatoes, chopped nettles, grated Pleasant Ridge cheese, flour, egg, salt, and black pepper. Mix until the dough comes together, being careful not to overwork it.
Form the Gnocchi
Divide the dough into sections. Roll each section into a long rope about 1/2-inch thick. Cut into 1-inch pieces to form gnocchi. Optionally, you can press each piece with a fork to create ridges.
Cooking the Gnocchi
Boil the Gnocchi
Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water. Cook for about 2-3 minutes or until they float to the top. Remove with a slotted spoon and set aside.
Serving
Sauté the Gnocchi
In a large skillet, melt the butter over medium heat. Add the cooked gnocchi and sauté until golden brown, about 5 minutes. Sprinkle with fresh herbs before serving.
