Preparation of Pork Chop
Season the Pork
Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
Prepare the Tamarind Glaze
In a small bowl, mix together tamarind paste, honey, and soy sauce until smooth.
Cooking the Pork Chop
Sear the Pork Chops
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown.
Glaze the Pork Chops
Reduce the heat to medium, brush the tamarind glaze over the pork chops, and cook for another 2-3 minutes, turning frequently until the glaze is sticky and caramelized.
Rest the Pork Chops
Remove the pork chops from the skillet and let them rest on a plate for 5 minutes before serving.
Preparing the Vegetables
Prepare the Garlic
Thinly slice the garlic cloves.
Cook Broccolini and Baby Kale
In the same skillet, add broccolini and cook for about 3-4 minutes until tender. Add baby kale and fermented peppers for another 1-2 minutes, stirring until the kale wilts.
Combine and Serve
Plate the pork chops alongside the sautéed vegetables, and top with crispy garlic.
