Slice the Potatoes

Wash and scrub the russet potatoes, then slice them thinly using a mandoline or knife.

Fry the Potato Slices

Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry the potato slices in batches until golden and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Crispers

In a large bowl, combine the hot potato slices with dried dill weed, garlic powder, and salt. Toss well to coat evenly.

Make the Sauce

In a small bowl, mix together mayonnaise, dill pickle juice, chipotle in adobo sauce, and dried dill weed until well combined. Adjust seasoning to taste.
