Method

Chicken Preparation

1

Marinate the Chicken

In a medium bowl, combine olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper. Whisk together until well combined.

2

Add Chicken

Place the chicken breasts in the marinade and coat evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

3

Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

4

Cook the Chicken

Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Vegetable Accompaniment Preparation

5

Prepare the Vegetables

Trim the asparagus ends and cut the red onion into wedges. Halve the cherry tomatoes.

6

Toss the Vegetables

In a large bowl, combine asparagus, cherry tomatoes, red onion, balsamic vinegar, and honey. Toss until the vegetables are evenly coated.

7

Grill the Vegetables

Place the vegetable mixture on a grill basket or directly on the grill. Cook for about 10 minutes, stirring occasionally, until they are tender and slightly charred.

Plating

8

Serve

Place grilled chicken on a plate and serve alongside the grilled vegetables. Drizzle with additional balsamic vinegar if desired.
