Method
Preparation
Prepare the Chicken
Start by patting the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
Chop the Tomatoes
Dice the tomatoes into small chunks and set aside.
Mince the Garlic
Peel and mince the garlic cloves finely.
Chop the Basil
Wash and chop the fresh basil leaves, setting them aside for garnish.
Cooking
Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Cook the Tomatoes and Garlic
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, then add the diced tomatoes. Cook for 5-7 minutes until the tomatoes soften and release their juices.
Combine Chicken with Tomato Mixture
Return the seared chicken to the skillet, spooning the tomato mixture over the chicken. Let simmer for an additional 4-5 minutes to allow flavors to meld.
Add Fresh Basil
Stir in the chopped basil and if desired, sprinkle red pepper flakes for a hint of heat. Cook for another minute.
Serving
Plate and Serve
Serve the chicken topped with the tomato mixture and garnish with additional fresh basil and Parmesan cheese if using.
