Prepare the Chicken

Start by patting the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Chop the Tomatoes

Dice the tomatoes into small chunks and set aside.

Mince the Garlic

Peel and mince the garlic cloves finely.

Chop the Basil

Wash and chop the fresh basil leaves, setting them aside for garnish.

Sear the Chicken

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, then add the diced tomatoes. Cook for 5-7 minutes until the tomatoes soften and release their juices.

Return the seared chicken to the skillet, spooning the tomato mixture over the chicken. Let simmer for an additional 4-5 minutes to allow flavors to meld.
