Sausage Preparation

Prepare the Sausage Mix

In a large bowl, combine ground lamb, minced garlic, cumin, coriander, paprika, cayenne pepper, chopped mint, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.

Stuff the Sausage

Rinse hog casings under cold water and soak in water for at least 30 minutes. Fit a sausage stuffer with the casing, and fill with the lamb mixture, being careful not to overstuff. Tie off the ends securely.

Cook the Sausage

Preheat the grill or a skillet over medium heat. Grill or cook the sausages for about 10-12 minutes, turning occasionally, until fully cooked and browned on the outside.
