Prepare the Sausage Mixture
In a large mixing bowl, combine the ground pork, garlic powder, onion powder, paprika, salt, black pepper, red pepper flakes, and chopped parsley. Mix well until all ingredients are evenly combined.
Soak the Casings
Soak the natural sausage casings in a bowl of water for at least 30 minutes prior to use. This will make them easier to handle and fill.
Stuffing and Cooking
Stuff the Casings
Rinse the soaked casings under cold water and slide one end onto a sausage stuffer tube. Fill the casings with the sausage mixture, being careful not to overstuff. Twist the sausages into 6-inch links and tie off the ends securely.
Cook the Sausages
In a large skillet, heat olive oil over medium heat. Add the sausage links and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through (the internal temperature should reach 160°F or 70°C).
Serve
Remove the sausages from the skillet and let them rest for a few minutes before serving. Enjoy your homemade sausage links with your choice of sides.
