Method
Clarified Lime Juice
Combine and curdle
In a jar or container, combine 8 oz fresh lime juice with 2 whole egg whites. Stir vigorously until homogeneous. Let sit 20–30 minutes at cool room temperature to allow curds to form.
Strain
Line a fine-mesh sieve with a double layer of cheesecloth or a coffee filter and set over a clean container. Slowly pour the curdled lime mixture through the cloth, allowing the clear liquid to drip through. Do not press the solids; let gravity clarify for 30–45 minutes until you have a clear, pale lime liquid. Refrigerate clarified lime juice until ready to use. Yield ~6 oz.
Cocktail Assembly
Chill an old-fashioned glass by filling with ice water and set aside.
Add 2 oz Hornitos Blanco, 0.5 oz Cointreau, 0.75 oz clarified lime juice, 0.25 oz simple syrup, and 0.25 tsp Mama Picante into a mixing glass or shaker.
Fill the shaker with ice and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Discard the ice water from the serving glass. Strain the cocktail slowly over one Vault ice (large clear ice cube or sphere) using a fine strainer to remove any small ice shards.
Garnish with a lime wheel or expressed lime peel: hold the peel over the drink, give a quick twist to express oils, then rub the rim and place on top.
Serve immediately. Suggestion: offer a small extra dropper or spoon of Mama Picante at the side if guest wants more heat.
