Earl Grey & Lavender Tea Syrup

Earl Grey & Lavender Tea Syrup

Steep

In a small saucepan combine 1 cup water and 1 cup granulated sugar. Bring to a gentle simmer over medium heat, stirring until sugar dissolves.

Add tea and lavender

Remove the pan from heat, add 3 Earl Grey tea bags and 1 teaspoon dried lavender to the hot syrup. Cover and steep for 10 minutes to infuse. Do not boil with the tea to avoid bitterness.

Finish syrup

After 10 minutes, remove the tea bags (squeeze gently) and strain the syrup through a fine mesh sieve to remove lavender bits. Stir in 1 tablespoon fresh lemon juice. Let cool to room temperature, then refrigerate in an airtight container. Yields about 1 cup syrup.

Blueberry Puree

Cook blueberries (if using frozen or to intensify flavor)

Place 1 cup blueberries, 1 teaspoon sugar and 1 teaspoon lemon juice in a small saucepan over medium heat. Cook, stirring occasionally, until berries burst and release juice, about 4–6 minutes. If using fresh and you prefer a raw puree, skip cooking and proceed to next step.

Blend and strain

Transfer cooked or raw berries to a blender or use an immersion blender, and puree until smooth. If too thick, add up to 1 teaspoon water to reach a pourable consistency. For a smooth texture, pass the puree through a fine mesh sieve, pressing with the back of a spoon to yield about 3/4–1 cup strained puree. Chill until ready to use.

Assembly & Serve

Fill a highball or Collins glass with ice (about 1 cup).

Add 1 oz fresh lemon juice, 1 oz blueberry puree and 0.75 oz Earl Grey & lavender syrup into the glass. Stir briskly to combine and to chill the mixture.

Top with 3 oz club soda and gently stir once to integrate without losing all carbonation.

Garnish with a lemon wheel and 6 fresh blueberries on a pick or dropped into the drink. Serve immediately.

Optional: For a layered/visual effect, spoon blueberry puree in first, gently add the lemon + syrup mixture, then top with soda so the drink shows subtle gradients of pale gray-blue to purple.
