Method

Vanilla Syrup (make ahead, yields ~1 cup)

Combine and simmer

In a small saucepan combine 1 cup sugar and 1 cup water. If using a split vanilla bean, scrape the seeds into the pan and toss in the pod. If using extract, wait to add it off heat. Bring to a gentle simmer over medium heat, stirring until sugar dissolves.

Infuse and cool

Lower heat and let the syrup simmer very gently for 5 minutes to extract vanilla flavor. Remove from heat and let steep for 20–30 minutes. If you used vanilla extract, stir in 1 teaspoon once the syrup has cooled slightly. Strain out the vanilla pod and store syrup in a sealed container in the refrigerator for up to 2 weeks.

Fresh Ginger Juice (if you don't have a juicer)

Peel and finely grate 1 oz (about a thumb-sized piece) of ginger. Place grated ginger in the center of a clean cheesecloth or fine sieve. Press or squeeze over a small bowl with about 2 tbsp cold water to extract approximately 0.5 oz (about 1 tablespoon) of ginger-infused liquid. Strain out solids and reserve the ginger juice. This yields the 0.5 oz called for in the recipe.

Cocktail Assembly

Muddle mint

In a cocktail shaker, gently clap the 6 mint leaves between your hands to release aromas, then add them to the shaker. Using a muddler, gently press the mint 2–3 times — just enough to bruise leaves and release oils but not shred them.

Add liquids and ice

Add 2 oz white rum, 3 oz fresh pineapple juice, 0.75 oz fresh lime juice, 0.5 oz vanilla syrup, and 0.5 oz fresh ginger juice to the shaker. Fill the shaker with a generous scoop of ice (about 1 cup).

Shake

Shake vigorously for 10–12 seconds until the shaker is chilled and slightly frosty. This integrates the ingredients and lightly chills the mint oils.

Double-strain into glass

Fill a highball or Collins glass with fresh ice. Double-strain the cocktail into the glass through a fine mesh strainer to remove mint bits and any pulp. This keeps the drink smooth.

Top with ginger beer

Top the cocktail with about 3 oz ginger beer (adjust to taste for fizz and spice). Gently stir once with a bar spoon to integrate, being careful not to over-stir and flatten the carbonation.

Garnish and serve

Garnish with a pineapple wedge on the rim, a sprig of mint (slap it first to release aroma), and an optional lime wheel. Serve immediately with a straw.
