Apricot-Rosemary Syrup

Soak the apricots (optional quick step)

If your dried apricots are very dry, place them in a heatproof bowl and cover with 1/4 cup hot water for 10 minutes to soften. Drain and reserve soaking liquid—use in the syrup if needed.

Combine 1 cup water and 3 tablespoons turbinado sugar in a small saucepan over medium heat. Stir until sugar dissolves.

Add the softened (or dry) apricots and 2 rosemary sprigs to the saucepan. Bring to a gentle simmer and cook 6–8 minutes, stirring occasionally, until apricots are plump and the liquid is fragrant and slightly reduced.

Remove from heat and let steep 10 minutes off the heat to infuse rosemary flavor more deeply.

Strain the mixture through a fine-mesh sieve, pressing on the solids with the back of a spoon to extract as much syrup as possible. Discard solids (or reserve a spoonful for garnish). You should have roughly 3–4 tablespoons of concentrated syrup. If syrup is too thick, add up to 2 tablespoons of the reserved soaking liquid or plain water to reach a pourable consistency. Chill until cold.

Citrus Juice Mix

Measure 1 cup fresh orange juice and 1 tablespoon fresh lemon juice into a jar or measuring cup. Stir to combine. Taste and adjust lemon if you prefer more brightness. Chill briefly if desired.

Optional: For a clearer cocktail, strain the juice through a fine mesh to remove pulp before combining with syrup and soda.

Fizz & Assembly

Prepare the glass: if using a turbinado-sugared rim, rub a lemon wedge around the glass lip, then dip the rim into a shallow dish of turbinado sugar to coat lightly.

Fill a highball or Collins glass with 1 cup ice.

Add 1–1 1/2 tablespoons apricot-rosemary syrup to the glass. Adjust to taste — use more for sweeter, more apricot-forward flavor.

Pour 3 ounces (about 1/3 cup) of the citrus juice mix over the syrup and ice.

Top with 12 ounces club soda, pouring gently to preserve carbonation. Stir once gently with a bar spoon to incorporate syrup and juice without flattening the fizz.

Garnish with 1 sprig rosemary and a thin apricot slice on the rim or floated in the drink.

Serve immediately. Provide additional syrup and lemon on the side for guests who prefer sweeter or brighter drinks.
