Prepare simple syrup (if not using pre-made)

Combine equal parts granulated sugar and water (for example, 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat gently, stirring until sugar dissolves. Cool to room temperature before use. (Makes extra — store in fridge.)

Place the fresh mint leaves (reserving one small sprig for garnish) into a cocktail shaker or Boston shaker tin.

Add the lemon juice, simple syrup, gin (or rum), and Green Chartreuse (if using) to the shaker with the mint.

Using a bar muddler or the back of a spoon, gently muddle the mint leaves 6–8 times. Press just enough to release the oils and aroma without shredding the leaves (over-muddling produces bitterness).

Fill the shaker with ice (about 3/4 full or roughly 1 cup) and secure the lid.

Shake vigorously for 10–15 seconds until the shaker is frosty and well chilled. This chills the drink and slightly bruises the mint to release more aroma.

Fine-strain the cocktail into a chilled coupe or rocks glass. For a brighter, cleaner presentation, double-strain through a fine mesh strainer to remove mint fragments and small ice shards.

If desired, add 1 dash of lemon bitters on top and gently swirl once.

Garnish & Serve

Garnish with the reserved mint sprig and a lemon wheel or twist. Clap the mint between your palms once before garnishing to release aromatic oils.

Serve immediately. Optional: For a longer, more refreshing serve, pour over fresh ice in a rocks glass instead of serving straight up.
