Cocktail

Blueberry Puree (quick)

Method

Habanero Ice (make ahead)

1

Prepare habanero-infused ice at least 4–6 hours before serving (overnight preferred). Lightly smash or slice the habanero and remove most seeds for controlled heat. Place habanero piece into an ice cube tray compartment, add a few drops of lime juice if using, and fill with water. Freeze until solid. Use 3 cubes per cocktail.

Blueberry Puree (quick)

2

Make the blueberry puree shortly before assembling cocktails. In a small blender or with an immersion blender, combine 1/2 cup blueberries and 1 teaspoon water. Blend until smooth. If you prefer a very smooth texture, press the puree through a fine mesh sieve to remove skins. Measure 1.5 tablespoons for each cocktail.

Cocktail Assembly

3

Chill glass

If desired, chill a coupe or rocks glass in the freezer or by filling with ice water while you mix the cocktail.

4

Add tequila (2 tbs), Cointreau (1 tbs), fresh lime juice (0.75 fl oz), blueberry puree (1.5 tbs), and agave syrup (0.5 tbs) to a cocktail shaker.

5

Add the regular ice (about 6 cubes) to the shaker. Seal and shake vigorously for 12–15 seconds to chill and dilute.

6

Dump the chilling ice/water from your serving glass (if used). Place 3 habanero-infused ice cubes into the glass.

7

Double-strain the shaken cocktail into the glass over the habanero ice. Double-straining (using a hawthorne and fine mesh strainer) removes blueberry solids for a smoother drink.

8

Garnish with a lime wheel and a skewer of 4–6 fresh blueberries. If you want an extra visual habanero cue and more heat, float half a thin habanero slice on top (optional).

9

Serve immediately. As the habanero ice melts it will gradually increase the cocktail's heat — warn guests accordingly.
