Prepare and combine

Chill a coupe or Nick & Nora glass by filling it with ice and setting aside. In a cocktail shaker add 1.5 oz Plantation dark rum, 0.5 oz Galliano, 1 oz fresh pineapple juice, 0.5 oz fresh orange juice, 0.25 oz rich simple syrup and 2 dashes Angostura bitters.

Shake

Fill the shaker with about 6 ice cubes, cap it and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and the ingredients are well-chilled and slightly diluted.

Strain

Dump the ice from the chilled glass, then double-strain the mixture into the chilled coupe using a julep strainer and a fine mesh strainer to remove small ice shards and any pulp.

Garnish & Finish

Express the oils of an orange twist over the surface of the drink by holding the twist skin-side down over the glass and giving it a quick fold to release the oils, then rub the peel along the rim and drop it into the drink.

Thread or place a small pineapple leaf or thin wedge on the rim or float it gently on the surface. If desired, grate a tiny pinch of fresh nutmeg over the top for aromatic complexity.
