Prepare Glass & Garnish
Rim the glass
Run the lime wedge around the rim of a rocks or coupe glass. Dip the rim into a shallow dish of coarse or fine sea salt to coat. Set the glass aside.
If using a prickly pear slice for garnish, chill it briefly in the freezer (5–10 minutes) so it holds shape and is cold when serving.
Make Cocktail
Add 2 oz blanco tequila, 0.75 oz Cointreau, 1 oz fresh lime juice, and 1.25 oz prickly pear puree into a cocktail shaker.
If you prefer a slightly sweeter drink, add 0.25 oz simple syrup. Add 6 ice cubes to the shaker.
Secure the shaker lid and shake vigorously for 12–15 seconds, until the outside of the shaker is very cold and well-chilled.
Garnish with a lime wheel on the rim and a prickly pear slice on the glass edge or floating in the drink.
Serving & Adjustments
Taste and adjust: if the cocktail is too tart, stir in small increments (0.1–0.25 oz) of simple syrup until balanced; if too sweet, add 0.25 oz more lime juice. Serve immediately.
