Rinse the oyster mushrooms under cold water to remove any dirt. Gently pat them dry with a paper towel.

In a mixing bowl, combine the salt, black pepper, and garlic powder. Sprinkle the seasoning mixture over the cleaned mushrooms and toss gently to coat.

Make the Batter

In a large bowl, mix the all-purpose flour, cornstarch, baking powder, and salt together. Gradually add the cold water, whisking until the batter is smooth and thick.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Mushrooms

Dip each seasoned oyster mushroom into the batter, allowing any excess to drip off. Carefully place the battered mushroom into the hot oil. Fry in batches to avoid overcrowding, cooking for about 3-4 minutes or until golden brown and crispy.

Once fried, use a slotted spoon to transfer the oyster shrooms to a paper towel-lined plate to drain excess oil. Serve hot, optionally with your choice of dipping sauce.
