If using toasted coconut rim, lightly rub one lime wedge around the rim of a highball or Collins glass, then dip the rim into the toasted shredded coconut to coat. Set glass aside.

Prepare glass rim (optional)

Place shredded coconut in a dry skillet over medium heat. Toast, stirring constantly, until light golden and fragrant, 2–3 minutes. Transfer to a small plate to cool before using for the rim.

Toast shredded coconut (if not pre-toasted)

In a sturdy mixing glass or cocktail shaker, place the 10 fresh mint leaves, 2 lime wedges (add the lime wedges after squeezing the fresh lime juice, or include them to extract extra oils), and 15 ml simple syrup. Using a muddler, gently press and twist the mint and lime 6–8 times — just enough to release the mint oils and lime juices without shredding the mint leaves.

Muddle mint and lime

Add 30 ml Bacardi Superior and 30 ml RumHaven to the muddled mint mixture, then pour in 30 ml coconut water. Add the 25 ml fresh lime juice if you did not include the lime wedges for juice while muddling. Fill the shaker or mixing glass with crushed ice (about 1 cup).

Add rums and coconut water

If using a shaker: cap and shake vigorously for 8–10 seconds to chill and dilute slightly. If using a mixing glass: stir briefly to combine and chill. The goal is to integrate flavors while keeping the drink bright.

Shake or build

If you prepared a rimmed glass, fill it with fresh crushed ice. Double-strain (or fine-strain if you prefer less mint bits) the cocktail into the prepared glass over the crushed ice to capture the mint and lime solids.

Strain into glass

Gently top the cocktail with 90 ml club soda. Use a long spoon to give the drink one gentle up-and-down stir to combine without flattening the bubbles.

Top with soda

Lightly clap the mint sprig between your palms to release aromas, then place it on top of the drink. Add a lime wheel to the rim or float it on the surface.

Finish and aromatics

Serve immediately with a straw placed off-center (so the first sip hits mint and lime). Optionally note that the coconut rim adds texture and an extra coconut note; if you skipped the rim, a small extra splash (10–15 ml) of coconut water can be added to increase coconut presence.

Preheat the oven to 350°F (175°C). Grease three 8-inch round cake pans, line bottoms with parchment, and grease the parchment. Lightly flour the pans or dust with cocoa powder.

Prep and preheat

Whisk dry ingredients together in a large bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract and sour cream until smooth.

Slowly add the wet mixture to the dry ingredients and stir until just combined. Do not overmix.

Stir in the hot brewed coffee gradually until the batter is smooth and thin — the hot liquid blooms the cocoa and makes a very fudgy batter.

Divide batter evenly among the three prepared pans (use a kitchen scale if possible, about the same volume each). Smooth tops.

Bake for 22–28 minutes, rotating pans halfway through, until a toothpick inserted near the center comes out with a few moist crumbs but not wet batter. Baking time will vary by oven.

Cool cakes in the pans for 10 minutes, then turn out onto wire racks, peel off parchment, and cool completely (at least 1 hour) before leveling and assembling. If the tops domed, level them with a serrated knife to create flat layers.

Combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat, let cool to warm, then stir in the dark rum or coffee liqueur (2 tbs). Let cool to room temperature. Use to brush and moisten cake layers before filling.

Place the chopped bittersweet chocolate (3 cups) in a heatproof bowl.

Heat 1.25 cups heavy cream in a small saucepan over medium heat until it just begins to simmer—bubbles form around the edge. Do not boil.

Pour the hot cream over the chopped chocolate. Let sit undisturbed for 1–2 minutes to melt the chocolate, then whisk gently from the center outward until the ganache is smooth.

Whisk in the room-temperature butter (1/4 cup), vanilla (1 tsp) and sea salt (1/4 tsp) until fully incorporated and glossy.

Cover the ganache and refrigerate until it is chilled and spreadable but not rock-hard, about 45–60 minutes. When chilled, whip the ganache with a mixer for 1–2 minutes until lightened and spreadable — this becomes your truffle cream. If ganache is too soft, chill briefly more; if too firm, let sit at room temperature a few minutes before whipping.

Put the chopped semisweet chocolate (1.5 cups) in a medium heatproof bowl.

Heat 1/2 cup of the heavy cream (from the 1.75 cups) in a small saucepan until it just simmers. Pour the hot cream over the chocolate, let sit 1–2 minutes, then whisk until smooth; this is the chocolate base. Let it cool to warm (about body temperature).

Whip the remaining 1.25 cups heavy cream to soft peaks. Refrigerate until needed.

In a clean bowl, whip the 3 pasteurized egg whites with 3 tbs sugar and a pinch of salt until glossy medium peaks form (stiff enough to hold shape but not dry).

Fold one-third of the whipped cream into the cooled chocolate to lighten it, then fold in the rest of the whipped cream gently to keep air. Finally fold in the whipped egg whites in two additions, using a spatula and cutting-and-folding motions until homogeneous, keeping as much volume as possible. Chill the completed mousse until slightly set but still pipeable, about 30–45 minutes.

Place the chopped bittersweet chocolate (1.5 cups) in a heatproof bowl.

Heat 3/4 cup heavy cream with 2 tbs light corn syrup just to a simmer. Pour over the chocolate, let sit 1 minute, then whisk until smooth and glossy.

Let the glaze cool to about 95–100°F (35–38°C) — warm but not hot — before pouring over the chilled assembled cake so it spreads smoothly and gives a glossy finish.

Level the three cooled cake layers so they are flat and even. Place the first layer on a cake board or serving plate and secure with a dab of truffle cream.

Brush the top of the first layer evenly with simple syrup (about 2–3 tbs) to moisten but not soak the cake.

Spread about one-third of the whipped truffle cream (ganache) in an even layer over the first cake, about 1/3–1/2 inch thick.

Place the second cake layer on top, press gently to level. Brush with simple syrup.

Pipe or spread about two-thirds of the chocolate mousse over the second layer to create a generous mousse layer (aim for 3/4–1 inch thickness). Smooth the mousse with an offset spatula.

Top with the third cake layer, brush with simple syrup. Use the remaining truffle cream to make a thin top layer or to seal the top (reserve a little truffle cream for decoration).

Apply a thin crumb coat all around the cake using any remaining truffle cream or a thin ganache layer. Smooth the coat and refrigerate the cake for 30–45 minutes to firm up.

After the crumb coat is chilled and firm, pour the cooled chocolate glaze over the center of the cake, allowing it to run naturally down the sides. Use an offset spatula to smooth the top to the edges if needed. Work quickly while glaze is at pouring temperature.

Chill the glazed cake in the refrigerator for at least 1 hour to fully set the glaze and fillings.

Finish by piping any reserved truffle cream around the top edge, sprinkling dark chocolate shavings, dusting with cocoa powder, and adorning with fresh berries or gold leaf as desired.

Let the cake sit at room temperature 15–20 minutes before slicing for cleaner cuts. Use a hot knife (dip in hot water, wipe dry) and slice with a steady, single motion. Serve chilled or slightly cool to maintain mousse texture.

If wings are whole, separate into drumettes and flats by cutting at the joint and discard tips (or save for stock). Pat wings very dry with paper towels — removing surface moisture is crucial for crispness.

Trim & Dry

In a large bowl, combine the baking powder, kosher salt, and black pepper. Add the dried wings and toss until evenly coated. The baking powder helps the skin crisp during frying.

Coat for Crispness

Pour 6 cups of neutral oil into a heavy-bottomed Dutch oven or deep fryer. Attach a deep-fry thermometer and heat to 325°F (163°C) for the first cook.

Heat Oil

Working in 2 batches (do not crowd), gently lower wings into the 325°F oil and fry for 10–12 minutes until they are cooked through (internal temp ~165°F / 74°C) and no longer pink at the bone. Remove with a slotted spoon to a wire rack set over a baking sheet to drain. Keep wings warm while you fry remaining batches; maintain oil at 325°F.

First Fry — Cook Through

After all wings have had the first fry, raise oil temperature to 375°F (190°C). Let the oil stabilize at this temperature.

Increase Temperature

Fry the wings in batches again at 375°F for 2–4 minutes per batch, or until golden brown and very crisp. Transfer to a clean wire rack to drain briefly (1–2 minutes).

Second Fry — Crisp

While wings are frying, combine the unsalted butter, hot sauce, white vinegar, Worcestershire, garlic powder, cayenne (if using), and 1/4 tsp salt in a small saucepan. Heat over low to medium heat, whisking until butter is melted and sauce is smooth. Bring to a gentle simmer for 1 minute, then remove from heat and keep warm. Taste and adjust salt or heat if needed.

Make Sauce

Place the crisped wings in a large, heatproof bowl. Pour the warm buffalo sauce over the wings and toss quickly but gently until each wing is evenly coated. Serve immediately so the skin stays crisp under the sauce.

Toss Wings in Sauce

In a bowl, combine the crumbled blue cheese, mayonnaise, sour cream, buttermilk, lemon juice, 1/2 tsp Worcestershire, minced garlic, 1/4 tsp salt, and 1/4 tsp black pepper. Stir until mostly smooth but still slightly chunky from the blue cheese. Taste and adjust seasoning or buttermilk for desired thickness.

Combine Ingredients

Cover and refrigerate the dressing for at least 15 minutes to let flavors meld. If preparing ahead, keep chilled until serving and stir before use.

Chill

Arrange sauced buffalo wings on a platter with chilled celery sticks on the side and the blue cheese dressing in a small bowl for dipping. Offer extra hot sauce and freshly ground black pepper if desired. Serve immediately while wings are hot and crisp.

Halve, pit and scoop the 2 avocados into a bowl. Mash lightly with a fork so mixture retains some texture. Stir in chopped sun-dried tomatoes, diced red onion, cilantro, lime juice, salt and pepper until evenly combined. Fold in the shredded pepper jack cheese. Taste and adjust seasoning.

Prepare filling

Lay one egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape). Spoon about 2 tablespoons of avocado filling near the corner closest to you, leaving a 1/2-inch border at the edges. Fold the bottom corner over the filling, fold both side corners in snugly, then roll tightly toward the top corner. Seal the top point using cornstarch slurry (1 tsp cornstarch mixed into 2 tsp water) to glue the edge. Repeat for all 6 wrappers. Place assembled rolls on a parchment-lined tray and refrigerate for 10–15 minutes to firm up.

Fill and roll

If using frozen corn, quick sauté or microwave until thawed and drained. In a bowl combine corn, rinsed black beans, diced bell pepper, diced chiles, shredded cheddar, cilantro, lime juice, ground cumin, salt and pepper. Mix to combine. Taste and adjust lime or salt.

Place an egg roll wrapper diamond‑style on the work surface. Spoon roughly 2–3 tablespoons of the Tex‑Mex mixture onto the lower third of the wrapper. Fold the bottom corner up over the mix, fold in the two sides, then roll tightly to the top. Seal with cornstarch slurry (about 1 tsp cornstarch + 2 tsp water). Repeat for all 6 wrappers. Chill on a tray for 10 minutes to set the seal.

Heat a skillet over medium-high heat. Add the ground beef and diced onion; cook until beef is browned and onion is translucent, breaking up meat as it cooks (6–8 minutes). Drain any excess fat. Return to skillet, stir in ketchup, mustard, Worcestershire, chopped pickles, salt and pepper. Remove from heat and let cool 5 minutes, then fold in shredded cheddar so it softens into the warm meat.

Cook burger filling

Place an egg roll wrapper diamond‑style. Spoon about 2–3 tablespoons of the cheeseburger mixture into the lower third. Fold bottom corner up, fold sides in and roll tightly to the top. Seal with cornstarch slurry (1 tsp cornstarch + 2 tsp water). Repeat for all 6 wrappers. Place on a tray and refrigerate 10 minutes to firm.

In a bowl mix shredded chicken, softened cream cheese, salsa, ground cumin, garlic powder and shredded Monterey Jack until evenly combined. Adjust seasoning to taste.

Make filling

Warm tortillas briefly (10–15 seconds each) in a dry skillet or microwave with a damp paper towel so they are pliable. Spoon about 2 tablespoons of the chicken mixture across one edge of a tortilla. Tightly roll the tortilla away from you to form a cigar shape and place seam-side down on a tray. Repeat for all 12 tortillas. If needed seal the seam with a dab of the cornstarch slurry.

Assemble taquitos

Combine 1 avocado, 1/2 cup sour cream, 1/4 cup cilantro, 1 tablespoon lime juice, 1/2 teaspoon salt and 2 tablespoons water in a blender or with an immersion blender. Blend until smooth and creamy, adding an extra teaspoon of water if needed to reach dipping consistency. Refrigerate until serving.

Avocado cilantro sauce

Stir together 1/2 cup sour cream, 1 tablespoon minced chipotle in adobo and 1 teaspoon lime juice. Taste and add a pinch of salt if needed. Chill until serving.

Chipotle crema

Whisk together 1/3 cup ketchup, 2 tablespoons yellow mustard and 1 tablespoon sweet pickle relish. Chill until ready to serve.

Burger-style dipping sauce

Pour about 3–4 cups vegetable oil into a large, heavy-bottomed pot or deep skillet to a depth of 2–3 inches (about 4 cups). Attach a thermometer and heat oil to 350°F (175°C). Meanwhile mix 2 tablespoons cornstarch with 4 tablespoons water to make a slurry (this is the seal used during assembly). Keep slurry nearby.

Prepare oil and slurry

Working in batches (do not overcrowd), carefully lower assembled egg rolls and taquitos seam-side down into the hot oil using tongs. Fry egg rolls 2.5–3.5 minutes, turning once, until wrappers are golden brown and crisp. Fry taquitos 2–3 minutes until golden and crisp. Remove to a wire rack or paper towel-lined tray to drain. Keep finished pieces in a 200°F (95°C) oven on a sheet pan to stay warm while frying remaining batches.

Deep-fry method

For a lighter option, preheat the oven to 425°F (220°C). Place rolls and taquitos seam-side down on a parchment-lined sheet pan, brush or spray lightly with oil, and bake 15–20 minutes, turning halfway, until golden and crisp. Baking times vary by oven; the exterior should be evenly browned.

Baked option

Arrange a sampler plate: portion the avocado, Tex‑Mex and cheeseburger egg rolls (6 each) plus 12 chicken taquitos on a platter with small bowls of the avocado cilantro sauce, chipotle crema and burger-style dipping sauce. Garnish with lime wedges and extra cilantro if desired. Serve immediately while hot and crisp.
