Prepare fruit and garnishes
Peel and chop mango into roughly 1-inch pieces until you have about 1.5 cups. If using fresh pineapple, core and chop, then freeze ahead or use pre-frozen chunks. If using fresh passion fruit, cut in half and scoop out the pulp into a small bowl; measure 0.33 cups for the blend and reserve about 2 tbs for drizzling. Set aside the mint sprigs.
Toast coconut flakes
Heat a small dry skillet over medium heat. Add 2 tbs coconut flakes and toast, stirring frequently, until golden brown and fragrant (about 2–4 minutes). Transfer to a plate to cool — they will crisp up as they cool.
Assemble blender
Add the chopped mango, frozen pineapple chunks, 0.33 cups passion fruit pulp, 0.75 cups full-fat coconut milk, 1 tbs fresh lime juice, 1 tbs honey, and a 0.125 tsp pinch of fine sea salt to a high-speed blender. Top with 1.5 cups of ice cubes.
Blend to desired consistency
Secure the lid and blend on high for 30–60 seconds until the mixture is smooth and slushy. Stop and scrape down the sides once or twice if needed. If the smoothie is too thick, add 1–2 tbs additional coconut milk and blend briefly. If too thin, add a few more ice cubes and pulse until you reach a thick, scoopable smoothie texture.
Taste and adjust
Taste the smoothie and adjust sweetness or acidity as needed: add up to 1 additional tbs honey for more sweetness, or 1/2 tbs lime juice for more brightness. Blend briefly after adjusting.
Notes
For a lighter version, substitute light coconut milk or a mix of coconut milk and cold water. If you prefer a pulp-free drink, strain the passion fruit before adding to the blender, but keeping some seeds/pulp adds tropical texture and visual appeal.
