Prepare the Pears
Peel the pears, leaving the stems intact. Cut a small slice off the bottom of each pear so they can stand upright.
Make the Poaching Liquid
In a medium saucepan, combine water, sugar, cranberry juice, orange juice, cinnamon stick, and vanilla extract. Bring the mixture to a gentle simmer over medium heat.
Poach the Pears
Once the poaching liquid is simmering, carefully add the pears. Reduce the heat to low and simmer for about 20-25 minutes, or until the pears are tender but not falling apart. Turn the pears occasionally for even cooking.
Cool the Pears
Once cooked, remove the pears from the poaching liquid and let them cool slightly. You can reserve the poaching liquid for drizzling later.
For the Poppy Seed Crumble
Preheat the Oven
Preheat your oven to 350°F (175°C).
Mix Dry Ingredients
In a mixing bowl, combine all-purpose flour, poppy seeds, brown sugar, and salt. Mix until evenly distributed.
Incorporate Butter
Add the cold, unsalted butter, cut into small pieces, to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
Bake the Crumble
Spread the crumble mixture onto a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until golden brown, stirring halfway through for even baking.
