Cooking the Rice

Prepare the Brown Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender and water is absorbed. Once cooked, fluff with a fork and set aside.

Sautéing the Vegetables and Beans

Sauté Garlic and Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Mince 2 garlic cloves and add them to the skillet, sautéing for about 1 minute until fragrant.

Add Mixed Vegetables

Add 1 cup of frozen mixed vegetables to the skillet and cook them for 5-7 minutes, stirring occasionally, until they're heated through and tender.

Incorporate Black Beans

Add 1 cup of canned black beans (drained and rinsed) to the skillet. Stir in 2 tablespoons of soy sauce, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for an additional 3-4 minutes until everything is heated through.

Combine Rice and Bean Mixture

Once the rice is ready, add it to the skillet with the vegetable and bean mixture. Stir well to combine all the ingredients and heat through for another 2 minutes.

Chop 1 tablespoon of fresh cilantro and sprinkle it over the top before serving.
