Bake the Chips

Preheat the oven to 350°F (175°C). Cut the corn tortillas into quarters and place them in a large bowl. Drizzle with olive oil and sprinkle with salt. Toss to coat evenly. Spread the tortilla pieces in a single layer on a baking sheet. Bake for 10-15 minutes or until crispy and golden, flipping halfway through.

Blend the Sauce

Soak the raw cashews in water for at least 2 hours or overnight. Drain and rinse the cashews, then add them to a blender with nutritional yeast, lemon juice, garlic powder, onion powder, cayenne pepper, and water. Blend until smooth and creamy, adjusting the water for desired consistency.

Assemble the Nachos

On a large plate or platter, layer the baked tortilla chips. Drizzle with the vegan cashew nacho sauce, then top with black beans, pickled jalapeños, salsa taquera, and guacamole. Garnish with chopped scallions and cilantro. Serve immediately.
