Method
Bacon
Preheat oven to 400°F (200°C). Arrange bacon in a single layer on a lined baking sheet. Bake 12–18 minutes until crisp to your liking. Transfer to paper towels to drain and keep warm.
Caramelized onions
While bacon cooks, heat a large skillet over medium-low heat. Add butter and olive oil. Add thinly sliced onion and a pinch of kosher salt. Cook, stirring occasionally, 18–25 minutes until soft and golden brown.
About halfway through cooking add granulated sugar. When onions are deeply golden, stir in balsamic vinegar, cook 1 more minute, then remove from heat and keep warm.
Monkey sauce (spicy finishing sauce)
In a small bowl, whisk together mayonnaise, sriracha, hoisin, soy sauce, rice wine vinegar, honey, grated garlic, sesame oil and lime juice until smooth.
If the sauce is too thick, whisk in hot water 1 tsp at a time until it reaches a spreadable consistency. Taste and adjust heat (more sriracha) or sweetness (more honey) as desired. Cover and refrigerate until assembly.
Beef sliders
Divide ground Angus beef into 6 equal portions (about 4 oz / 110 g each). Gently form into loose balls without overworking the meat.
Preheat a heavy cast-iron griddle or large skillet over medium-high heat. Add vegetable oil and brush to coat surface. Heat until shimmering.
Place 2–3 meat balls on the griddle (do not overcrowd). Immediately press each ball flat with a metal spatula or a heavy flat-bottomed smasher to create a thin patty ~1/4" thick. Season the exposed top with a little kosher salt and black pepper.
Cook undisturbed 2–3 minutes until edges are deeply browned and juices begin to bubble on top. Flip patties and immediately top each with a slice of cheddar. Cook another 1–2 minutes until cheese melts and patties are cooked to medium (adjust time for your preferred doneness).
Transfer finished patties to a warm tray while you smash and cook remaining patties. Repeat until all 6 are cooked.
Buns & assembly
To assemble each slider: spread about 1 tbsp of monkey sauce on the bottom bun, place a cheddar-topped beef patty, add a piece of bacon (or 1/2 slice folded for balance), top with a spoonful of caramelized onions, add 1–2 pickle slices if using, then drizzle another 1 tsp monkey sauce on the top bun and close.
Serve immediately while hot. Provide extra monkey sauce on the side for dipping.
