Prepare and measure

Chill a coupe or Nick & Nora glass in the freezer (or fill with ice water). Measure the pear vodka, pear liqueur, fresh lemon juice, and simple syrup.

Add the measured pear vodka (2 oz), pear liqueur (1/2 oz), lemon juice (1/2 oz) and simple syrup (3/4 oz) into a cocktail shaker.

Fill the shaker with the indicated shaking ice (about 1 cup) until roughly 3/4 full.

Secure the shaker and shake vigorously for 12–15 seconds, until the shaker is frosty and the outside is cold. Shaking chills, dilutes and integrates the citrus and syrup with the spirits.

If you chilled your serving glass with ice water, dump the ice water and dry the glass now.

Sparkle & Finish

Double-strain the shaken cocktail into the chilled coupe or Nick & Nora glass. Use a fine-mesh strainer in addition to the shaker strainer to remove tiny ice shards and any pulp from the lemon.

Top the cocktail gently with about 2 oz (a good finger-width) of chilled dry sparkling wine or Champagne. Pour slowly down the side of the glass to preserve effervescence.

Garnish: float a thin pear slice on the surface or perch it on the rim. Optionally, slap a thyme sprig between your palms to release aromatics and lay it across the pear slice, and/or add a lemon twist for additional citrus aroma.

Serve immediately. If serving over ice instead of up, fill a rocks glass with 1/2 cup fresh ice before double-straining and then top with sparkling wine.
