Prepare the Pulled Ham

In a saucepan over medium heat, combine the cooked ham, BBQ sauce, and apple cider vinegar. Cook until the ham is heated through and well combined with the sauce, about 5-7 minutes. Stir occasionally.

Creamed Spinach

Make the Creamed Spinach

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Pour in the heavy cream and season with salt and black pepper. Stir and cook until the mixture thickens slightly, about 5 minutes.

Roast the Tomatoes

Preheat the oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them out in an even layer and roast in the oven for 15-20 minutes, or until they are soft and slightly charred.

Prepare the Hollandaise Sauce

In a heatproof bowl, whisk the egg yolks and lemon juice together until thick and pale. Place the bowl over a pot of simmering water (double boiler) and continue whisking while slowly drizzling in the melted butter until the sauce is thickened. Stir in the smoked paprika and season with salt to taste.
