Method
Popcorn Chicken
Prepare the Chicken
Cut the chicken breast into bite-sized pieces and place them in a bowl.
Brine the Chicken
Pour the buttermilk over the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.
Coat the Chicken
In a separate bowl, mix the flour, cornstarch, salt, pepper, paprika, and garlic powder. Remove the chicken from the brine and coat each piece in the flour mixture, shaking off excess.
Fry the Chicken
In a deep pot, heat the vegetable oil to 180°C (350°F). Fry the coated chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.
Hot Honey Mustard
Mix the Sauce
In a small bowl, combine the honey, Dijon mustard, and hot sauce. Stir well to combine and set aside.

Prepare the Lettuce
Wash the romaine lettuce thoroughly and chop it into bite-sized pieces. Set aside for serving.

Make the Aioli
In a bowl, mix the mayonnaise, minced garlic cloves, and lemon juice until smooth. Set aside for serving.
