Wine Making Process

Prepare the Must

In a large fermentation vessel, combine the Chardonnay, Sauvignon Blanc, and Viognier. Add the sugar and water, stirring until the sugar is fully dissolved.

Add Yeast and Nutrients

Sprinkle the wine yeast over the mixture and add the acid blend. Stir gently to combine.

Campden Tablets

Crush the Campden tablet and add it to the must to prevent wild yeast and bacteria from interfering with fermentation. Let the mixture sit for 24 hours.

Fermentation

After 24 hours, cover the fermentation vessel with an airlock and allow the wine to ferment in a cool, dark place for 2-3 weeks, or until fermentation is complete.

Racking

Once fermentation is complete, siphon the wine off the sediment into a clean carboy, avoiding the lees at the bottom.

Aging

Seal the carboy with an airlock and let the wine age in a cool, dark place for at least 3 months.

Bottling

Once aged, siphon the wine into clean bottles, leaving some space at the top, and cork them. Let them rest for another month before enjoying.
