Marinate the Beef
In a large bowl, combine the red wine, olive oil, minced garlic, chopped thyme, salt, and black pepper. Add the cubed beef and toss to coat. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
Sear the Beef
Heat a large pot or Dutch oven over medium-high heat. Remove the beef from the marinade, reserving the marinade. Sear the beef in batches until browned on all sides. Remove the beef and set aside.
Combine and Simmer
Return the seared beef to the pot. Pour in the reserved marinade and beef broth. Add the bay leaves and stir to combine. Bring to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the beef is tender.
Serve
Remove the bay leaves. Serve the Chateau Maucoil hot, garnished with additional fresh thyme if desired. Enjoy with crusty bread or over mashed potatoes.
