Measure Ingredients

Chill a rocks glass or coupe briefly. In a cocktail shaker combine 2 oz dark rum, 0.75 oz fresh lime juice, 0.5 oz orange curaçao, 0.5 oz simple syrup, and 1 oz fresh pineapple juice.

Add Ice and Bitters

Add 4–6 large ice cubes to the shaker (or crushed ice if you prefer a more diluted, slushy texture). Add 2 dashes of angostura bitters into the shaker to add aromatic depth.

Shake

Shake vigorously for 12–15 seconds until the shaker is well chilled and the outside frosts. If you used crushed ice, shake 8–10 seconds to avoid over-dilution.

Serve & Garnish

Fill the chilled rocks glass or coupe with the crushed ice (about 1 cup). Fine-strain or double-strain the cocktail from the shaker over the prepared ice to remove any small shards of ice and citrus pulp.

Garnish with a lime wheel or wedge on the rim and a pineapple leaf or small wedge tucked into the ice. Optionally add one more tiny dash of angostura bitters on the top of the foam or surface for aroma.

Serve with a short stirring straw. Enjoy immediately while cold.
