Preheat the oven

Preheat your oven to 400°F (200°C).

Prepare the Brussels sprouts

Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Toss with olive oil and seasonings

In a large bowl, combine the halved Brussels sprouts, olive oil, salt, and black pepper. Toss until the sprouts are evenly coated.

Roast the Brussels sprouts

Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, flipping halfway through.

Add balsamic glaze and feta

Once the Brussels sprouts are done, remove them from the oven and drizzle with balsamic glaze. Sprinkle the feta cheese over the top and gently toss to combine.
