Prepare the Patty

In a large bowl, combine the ground beef, salt, and black pepper. Mix gently without overworking the meat.

Shape the Patty

Divide the mixture into two equal portions (8 oz each) and shape them into patties. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Sear the Patty

Heat olive oil in a skillet over medium-high heat. Once hot, place the patties in the skillet and sear for 4-5 minutes on each side until they reach your desired doneness.

Aioli

Make the Aioli

In a medium bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Whisk together until smooth. Set aside.

Tobacco Onions

Prepare the Onions

In a bowl, combine the flour, cornstarch, paprika, salt, and pepper. Mix well.

Coat the Onions

Dredge the thinly sliced onions in the flour mixture until well coated.

Fry the Onions

In a deep frying pan, heat vegetable oil over medium heat. Once hot, add the coated onions in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Toast the Buns (optional)

If desired, lightly toast the burger buns on a skillet or grill until golden.

Assemble the Burger

On the bottom half of each bun, spread a generous amount of aioli. Place a lettuce leaf, followed by the seared burger patty. Top with sliced tomato and a handful of crispy tobacco onions. Finish with the top half of the bun.
