Method
Preparing the Brownie Base
Melt Butter and Mix Sugars
Preheat your oven to 350°F (175°C). In a medium saucepan, melt 1 cup of unsalted butter over low heat. Once melted, remove from heat and stir in 1 cup of brown sugar and 1 tablespoon of granulated sugar until well combined.
Add Eggs and Vanilla
Stir in 2 teaspoons of vanilla extract. Then, add the eggs one at a time, mixing well after each addition until fully incorporated.
Combine Dry Ingredients
In a separate bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 0.5 teaspoon of salt. Gradually fold this mixture into the wet ingredients until just combined. Finally, fold in 1 cup of shredded coconut.
Bake the Brownies
Pour the brownie batter into a greased 9x9 inch baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
Making the Haupia Topping
Combine Coconut Milk and Cornstarch
In a saucepan, combine 1 can of coconut milk, 0.5 cup of cornstarch, and 0.25 cup of sugar. Whisk until the cornstarch is fully dissolved.
Cook the Mixture
Heat the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes. Remove from heat and stir in 1 teaspoon of vanilla extract.
Layer on Brownies
Once the brownies have cooled, pour the haupia mixture on top of the brownies and spread evenly. Refrigerate for at least 1 hour to set.
Preparing the Chocolate Drizzle
Melt Chocolate and Butter
In a microwave-safe bowl, combine 4 oz of dark chocolate and 2 tablespoons of unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Serving the Dessert
Assemble and Serve
Once the haupia is set, drizzle the melted chocolate mixture over the top. Cut into squares and serve with a scoop of vanilla ice cream.
