Start by rinsing the quinoa under cold water in a fine mesh strainer to remove any bitterness.

Cook the Quinoa

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Chop Vegetables

While the quinoa is cooking, chop the red bell pepper, zucchini, and carrot into small pieces. Set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 1 minute until fragrant. Add the chopped vegetables (bell pepper, zucchini, carrot) and sauté for 5-7 minutes until they start to soften.
