Storage

Keep the unopened 8 oz bag in a cool, dark place. After opening, reseal tightly (use valve side up) and store in a cool, dry cupboard. For best flavor, use within 2–4 weeks of opening.

Portioning

Decide how much coffee to brew. A standard starting ratio is 1:16 (coffee:water) by weight. For a single 12-16 fl oz cup, use 20 grams of coffee to 320 grams (ml) water. You can scale up or down as needed using the same ratio.

Grind

Weigh out the coffee: 20 g for a single cup (adjust to taste). Grind to the appropriate consistency for your brew method: medium-fine for AeroPress, medium for pour-over (V60), medium-coarse for Chemex, and fine for espresso. Grind just before brewing for maximum freshness.

Heat water

Heat filtered water to 200°F (93°C), or just off boil (bring to a boil and rest 30 seconds). Measure 320 ml (g) for a 20 g dose (1:16 ratio).

Prepare brewer

Place filter in your brewer. Rinse the filter with hot water to remove papery taste and preheat the brewer and cup/server. Discard rinse water.

Bloom

Place ground coffee in the filter. Start timer and pour 40 g (ml) of water evenly over the grounds to saturate them. Let bloom for 30–45 seconds to allow CO2 to escape; you should see bubbling and expansion.

Brew

After bloom, pour remaining water in slow, controlled concentric circles or pulses until you reach 320 g total. Aim to finish pouring by 2:30–3:00 minutes for a pour-over. For AeroPress or other methods, follow method-specific times (AeroPress commonly ~1:30–2:30 total).

Serve

Allow coffee to finish dripping (total brew time roughly 2:30–3:30 for pour-over, 1:30–2:30 for AeroPress, longer for Chemex). Remove brewer and discard grounds and filter. Pour coffee into your cup or server.

Finish (optional)

Add milk or sweetener if desired. Taste and adjust future brews by altering grind (finer = slower extraction and stronger), dose (increase grams for stronger), or ratio (1:15 for stronger, 1:17 for lighter).
