Prepare the Ingredients

Wash the shiso leaves thoroughly under cold water and pat them dry with a paper towel. Peel the fresh ginger and grate it finely.

Mix the Base

In a cocktail shaker, combine the sake, grated ginger, honey, and lemon juice. Stir well to dissolve the honey completely.

Final Assembly

Add Shiso

Tear the 5 shiso leaves into smaller pieces and add them to the cocktail shaker. Fill the shaker with ice.

Shake it Up

Secure the lid on the shaker and shake vigorously for about 15 seconds until the mixture is chilled.

Strain and Serve

Strain the mixture into a chilled cocktail glass. Garnish with lemon zest and the reserved shiso leaves.
