Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer. Remove from heat and let cool to room temperature. Store in a jar — yields about 1 cup. Use 2 tablespoons for this recipe.

Prepare Passion Fruit

If using fresh passion fruit, cut 2–3 fruits in half and scoop out the pulp and seeds until you have about 1 cup. If using frozen, thaw and drain any excess liquid, reserving the seeds/pulp for garnish if desired.

For a smoother drink (optional): press the pulp through a fine-mesh strainer with the back of a spoon to separate some juice from the larger seeds. Reserve about 2 tablespoons of whole pulp/seeds for garnish and transfer the strained juice to a measuring cup.

Classic Passion Fruit Refresher

In a shaker or large jar, combine 1 cup passion fruit pulp or strained juice, 1 cup cold water, 2 tablespoons simple syrup (adjust to taste), and 1 tablespoon fresh lime juice. Add 1 cup ice. Shake vigorously for 10–15 seconds until well chilled and slightly frothy. Strain into a tall glass filled with fresh ice. Top with the reserved 2 tablespoons of pulp/seeds for texture and visual appeal. Garnish with a lime wheel and mint sprig.

Creamy Almond Passion

For the almond milk version, reduce cold water to 1/2 cup and add 1 cup unsweetened almond milk and 1 teaspoon vanilla extract. In a shaker combine 1 cup passion fruit (strained or unstrained), 1/2 cup cold water, 1 cup almond milk, 2 tablespoons simple syrup, 1 tablespoon lime juice, and ice. Shake gently but thoroughly for 8–10 seconds (vigorous shaking can create too much foam with almond milk). Strain into a glass over fresh ice. Spoon the reserved 2 tablespoons of seeds/pulp on top. Garnish with a lime wheel and mint sprig.

Finish & Serve

Taste and adjust sweetness or acidity: add more syrup if too tart, or another 1/2 tablespoon lime juice if too sweet. Serve immediately. If preparing for multiple servings, keep passion fruit juice chilled and add ice and almond milk only at service to avoid dilution.
