Place a coupe or chilled martini glass in the freezer for a few minutes or fill it with ice water while you build the cocktail to ensure the drink stays cold.

In a mixing glass or cocktail shaker filled with ice, pour 2 oz Bombay Sapphire gin, 0.75 oz Lillet Blanc, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup if you prefer a touch of sweetness. The simple syrup is optional — omit if you want a drier Vespar.

Combine ingredients

Shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled. This both dilutes and chills the drink to the correct temperature.

Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp from the lemon juice.

Strain

Express the oils from a lemon twist over the surface of the cocktail by holding the twist about 2–3 inches above the drink and giving it a firm bend. Rub the twist along the rim of the glass, then drop it into the drink as garnish.

Drain the fries and spread them on clean kitchen towels or paper towels. Pat completely dry—moisture will cause oil splatter and reduce crisping.

Heat neutral frying oil in a heavy pot or deep fryer to 300°F (150°C). Working in batches, fry the potatoes for 4–5 minutes until soft but not colored. Remove with a slotted spoon and drain on paper towels. Let cool 10 minutes. (If you do not have a thermometer, test with a small piece: it should sizzle gently and not brown.)

First fry (blanch)

In a clean skillet or small pot, melt the duck fat over medium heat until shimmering. Heat remaining neutral oil (if using a deep fryer, heat to 375°F / 190°C) or maintain pot oil at 375°F. Return par-fried potatoes to the hot oil in batches and fry until golden-brown and crisp, about 2–4 minutes. If using skillet with duck fat only, ensure the fat is hot (but not smoking) and fry in a shallow layer, turning to crisp evenly. Remove fries to a wire rack or paper towels to drain immediately and season with 1 tsp coarse kosher salt while hot.

Finish fry in duck fat

While fries are still hot, transfer to a large bowl. Drizzle with 1 tsp truffle oil and sprinkle the freshly grated black truffle evenly over the fries. Toss gently but thoroughly so each fry gets a little truffle and oil.

Sprinkle the grated Parmesan, chopped parsley, fine sea salt, and freshly ground black pepper over the fries. Toss once more to distribute. Taste and adjust seasoning: add a little more truffle oil (up to a further 1/2 tsp) or salt if needed.

Serve immediately while hot and crispy. Optionally offer extra grated Parmesan and a small dish of fine sea salt at the table.

Harvest Chardonnay grapes at around 10–11 g/L potential alcohol for sparkling base. Sort and destem if desired, then press gently to obtain clear juice (free-run preferred). Aim for approximately 3.5 L of juice from 4 kg of grapes.

Measure acidity and pH. Add potassium metabisulfite to reach ~30–50 mg/L free SO2 to protect must. If total acidity is low, add small measured amounts of tartaric acid (about 0.5 tsp) to achieve a bright acid profile typical of Blanc de Blancs.

Must Adjustment and SO2 Addition

Cool the must to 12–14°C and inoculate with a champagne/neutral sparkling yeast strain (about 1 tsp rehydrated per manufacturer instructions). Add 0.5 tsp yeast nutrient. Ferment slowly at 12–16°C until dryness (residual sugar <2 g/L). Monitor temperature and fermentation kinetics daily.

Inoculation and Primary Fermentation

After fermentation, rack the wine off gross lees after a few days but retain fine lees for gentle aging (1–6 months) to build texture. Stabilize cold if needed to precipitate tartrates, then adjust and rack to obtain a bright, clear base wine (~3.5 L). Maintain low SO2 (target free SO2 ~20–25 mg/L).

Lees Aging and Clarification

Prepare a tirage liqueur by dissolving 40 g sucrose in a small amount of warmed, sterile water (to make about 40–60 ml solution) and mixing with a measured active yeast and nutrient slurry. Cool to cellar temperature (~12°C). The sugar amount listed (40 g for 3.5 L) will create roughly 6–7 bar/atm of pressure appropriate for Champagne-style bubbles.

Prepare Tirage

Bottle the base still wine into champagne bottles (leave about 6–8 cm headspace). Add the tirage liqueur to each bottle evenly, then crown-cap or temporarily seal. Invert gently to mix and place bottles horizontally in a cool, dark cellar at 12°C to allow secondary fermentation to start and finish (typically 2–6 weeks). Monitor pressure indirectly by time and fermentation activity.

Bottling for Secondary Fermentation

After secondary fermentation is complete and bottles are closed, age on lees horizontally for extended autolysis development. For an Extra Brut Blanc de Blanc character reminiscent of Larmandier-Bernier, age 12–36 months on lees to develop fine bread/yeast complexity and texture. Periodically inspect bottles for seal integrity.

Aging on Lees

After the desired lees aging, perform riddling to collect the yeast sediment in the neck. Traditionally, place bottles on riddling racks and gradually tilt and rotate over 4–8 weeks until the lees settle into the neck. For small-scale, use manual gradual turning; for quicker methods, use a gyro machine if available.

Riddling (Remuage)

Chill the bottle necks in a brine or freezer bath (use the disgorging brine or a dedicated freezing solution) until the sediment plug freezes solid. Remove the crown cap, and the internal pressure will eject the frozen plug of lees. Work quickly to minimize wine loss and oxygen uptake.

Disgorging

Prepare a very light dosage: about 3 g/L sugar equivalent per 750 ml bottle (roughly 3 g sugar per bottle). Mix the sugar solution with a small amount of the base reserve wine to make a neutral liqueur d'expedition. Add the dosage to each disgorged bottle to top up to the correct volume and achieve Extra Brut sweetness (typically 0–6 g/L; here target ~2–4 g/L).
