Prepare basilines (wrap)

If using vegetarian bacon strips, lay one strip diagonally across each vegetarian hot dog and secure by gently pressing so it adheres. This adds smoky flavor similar to Sonoran-style bacon-wrapped dogs.

Cook hot dogs

Heat a large cast-iron skillet or grill over medium-high heat. Add 1 tablespoon vegetable oil and sear the wrapped vegetarian hot dogs, turning occasionally, until the bacon-style strip is crisped and the hot dogs have char marks, about 6–8 minutes total. If using an indoor skillet, press slightly to increase contact. Remove to a plate and keep warm.

Toast buns

Brush the cut sides of each bun with the remaining 1 tablespoon vegetable oil. Place buns cut-side down in the same skillet or on the grill for 1–2 minutes until golden and slightly crisp. Remove and keep warm.

Toppings & Salsa

Warm refried beans

Place refried beans in a small saucepan over low heat. Stir in a pinch of salt, black pepper, and smoked paprika (if using) and heat, stirring, until warmed through, about 4–5 minutes. Keep warm on low.

Quick pico-style salsa

In a medium bowl combine diced tomato, finely diced white onion, chopped cilantro, sliced pickled jalapeños, and 2 tablespoons lime juice. Toss, season to taste with a pinch of salt, and set aside. This fresh salsa provides the bright topping typical of Sonoran dogs.

Prepare sauces

In a small bowl mix mayonnaise and mustard together until smooth. Taste and adjust: add a little extra lime juice or a pinch of salt if desired. Transfer to a squeeze bottle or small serving bowl for easy assembly.

Crumble cheese

If using cotija or vegan crumbly cheese, place in a small bowl and fluff with a fork so it's ready to sprinkle over the assembled dogs.

Assembly & Serve

Layer beans: Holding an open bun, spread about 2 tablespoons of warm refried beans along the bottom of each bun, creating a base layer. This helps keep the hot dog in place and is traditional for Sonoran-style dogs.

Place hot dog: Set one cooked vegetarian hot dog into each bean-lined bun.

Top with salsa: Spoon about 2–3 tablespoons of the tomato-onion-jalapeño salsa over each hot dog.

Add sauces and cheese: Drizzle about 1 tablespoon of the mayo-mustard sauce over each dog, then sprinkle approximately 1 tablespoon of crumbled cotija (or vegan cheese) per dog. Finish with extra cilantro and a squeeze of lime if desired.

Serve immediately: Arrange on a platter and serve while warm. Provide napkins — these are meant to be indulgent and slightly messy, like Tucson street-style Sonoran dogs.
