Prepare bacon-wrapped dogs

Lay out 12 bacon strips. Wrap two bacon strips spirally around each hot dog, leaving the ends tucked under to secure. If bacon strips are wide, use one per dog. Secure with a toothpick if needed.

Grill or skillet-cook hot dogs

Heat a grill or large cast-iron skillet to medium-high (about 375–400°F / 190–205°C). Place the bacon-wrapped hot dogs seam-side down and cook, turning occasionally, until bacon is crisp and hot dogs are cooked through, about 10–12 minutes. If using a skillet, drain excess fat as needed.

Toast rolls

Split the bolillo/hot dog rolls and place cut-side down on the grill or skillet for 1–2 minutes, just until lightly toasted and golden. Remove and keep warm.

Place one cooked bacon-wrapped hot dog in each toasted roll and set aside for topping.

Toppings & Condiments

Prepare pico-style topping

In a medium bowl combine the diced white onion and diced roma tomato. Add salt (1 tsp) and black pepper (1/2 tsp). Toss to mix and let sit 5 minutes to meld flavors.

Make mayo finish

If using Mexican-style mayo, thin slightly with 1–2 teaspoons of lime juice or water to reach a drizzling consistency. If using regular mayo, you can mix in 1 teaspoon lime juice for brightness.

Assemble the Sonoran-style toppings: drizzle about 1 tablespoon yellow mustard and 2 tablespoons mayonnaise over each hot dog. Spoon 2–3 tablespoons of the onion-tomato mixture on top of each. Add a tablespoon of the chopped jalapeño/serrano salsa (more or less to taste) and optional pickled jalapeños.

Optional Sides & Finish

If serving fries, fry or bake according to package or your recipe and season with salt while hot. Warm refried beans gently on the stove or microwave and serve alongside dogs as a dipping option.

Serve each El Güero Canelo Sonoran dog with a lime wedge. Encourage squeezing a bit of lime over the toppings just before eating for brightness.
