Prepare pineapple
Cut the fresh pineapple into 1-inch chunks. Measure 2 cups packed pineapple pieces.
Cook fruit and aromatics
In a medium saucepan combine 1 cup water, 1 cup granulated sugar, sliced ginger, whole cloves and the split vanilla bean (if using extract, add later). Bring to a gentle simmer over medium heat, stirring until sugar dissolves, about 3–4 minutes.
Simmer with pineapple
Add the pineapple chunks to the saucepan. Reduce heat to low and simmer gently, uncovered, for 12–15 minutes until pineapple is very soft and translucent and the liquid is fragrant and slightly thickened.
Strain and press
Place a fine-mesh sieve or cheesecloth over a bowl or pitcher. Pour the pineapple mixture into the sieve and press firmly with the back of a spoon or squeeze the cheesecloth to extract as much liquid as possible. Discard solids (or reserve for use in cocktails or baking).
Finish cordial
If you used a vanilla bean, remove and discard the pod. Stir in 2 tablespoons fresh lime juice and a pinch of salt to the strained syrup. If you used vanilla extract, add 1 teaspoon now. Taste and adjust sweetness or acidity: add up to 1/4 cup additional water if the cordial is very concentrated.
Cool and bottle
Allow the cordial to cool to room temperature, then transfer to a clean bottle or jar with a tight lid. Refrigerate. The cordial will keep 2–3 weeks refrigerated.
Finishing & Serving
Serve as a nonalcoholic drink
To serve a refreshing soft drink: mix 2 ounces (about 1/4 cup) pineapple cordial with 2–3 ounces sparkling water and a handful of ice. Stir gently, garnish with a lime wedge and mint sprig. Adjust cordial to taste (dilute with additional filtered water if too sweet).
Make a cocktail
For a simple cocktail: in a shaker filled with ice combine 1.5 oz rum or vodka and 1.5–2 oz pineapple cordial. Shake briefly and strain into a rocks glass over fresh ice. Top with 1–2 oz sparkling water if desired, garnish with lime and mint.
Storage and uses
Store refrigerated in a sealed container up to 2–3 weeks. Use as a mixer for cocktails, drizzle over yogurt or ice cream, fold into fruit salads, or dilute as a refresher.
