Pickled Ramp & Idaho Potato Stack

Prepare pickled ramps

Trim ramps: separate bulbs from greens and rinse well. Thinly slice bulbs and chop greens into 1-inch pieces. In a small saucepan, combine apple cider vinegar, water, granulated sugar, and kosher salt; bring to a gentle simmer until sugar and salt dissolve (about 2 minutes). Remove from heat, add sliced ramp bulbs and greens, and let sit at room temperature for 20–30 minutes. Reserve 1 teaspoon of the pickling liquid for finishing.

Cook and slice potatoes

Peel (optional) and thinly slice the Idaho potatoes into 1/8- to 1/4-inch rounds. In a skillet over medium heat, melt 1 tablespoon butter with 1 tablespoon olive oil. Add potato slices in a single layer (work in batches if needed). Season with 1/4 tsp salt and 1/8 tsp black pepper. Cook 3–4 minutes per side until golden and tender. Transfer to paper towels to drain and keep warm.

Assemble stacks

Using a 2.5–3 inch round ring or freehand, stack 3–4 potato slices per stack, layering a small spoonful of pickled ramps (bulbs and some greens) between layers so each stack has pickled ramp in the middle and on top. Keep stacks warm.

Herbed Goat Cheese Mousseline

Soften goat cheese: in a small bowl, combine the goat cheese and heavy cream. Beat with a fork or small whisk until smooth and airy. Fold in chopped chives, dill, lemon zest, lemon juice, and 1/4 tsp salt. Adjust consistency with an extra teaspoon of cream if needed to pipe. Transfer the mousseline to a piping bag (or a zip bag with a corner snipped).

Crispy Barley & Topping

Cook pearled barley

Rinse barley under cold water. In a small saucepan bring 1 1/4 cups vegetable stock to a simmer, add barley and 1 tablespoon butter, cover and cook until tender but slightly chewy, 20–25 minutes. Drain any excess liquid and fluff with a fork. Spread barley on a plate to cool slightly—this helps create a little texture when combined with crispy elements.

Prepare crispy topping

In a small skillet over medium heat, add 1 tablespoon olive oil and 1/2 cup panko breadcrumbs. Toast, stirring, until golden, 3–4 minutes. Stir in 2 tablespoons grated Parmesan and chopped toasted hazelnuts; season with a pinch of salt. Remove from heat and let cool. Fold 2 tablespoons of the toasted panko mixture into the cooked barley to add crunch; reserve remaining panko for garnish.

Garnish & Finish

Plate the stacks: place 2 potato & ramp stacks per plate. Pipe a small rosette (about 1 tablespoon) of herbed goat cheese mousseline beside each stack or dot on top of each stack. Spoon a teaspoon of the barley mixture artfully around the stacks for texture.

Finish and serve: Scatter microgreens or baby arugula around and on top. Drizzle 1 teaspoon lemon oil over the plate and lightly sprinkle flaky sea salt and the reserved 1 teaspoon pickling liquid in tiny spots to brighten flavors. Serve immediately while potato stacks are warm and barley retains some crispness.
