Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until thoroughly combined.
Cut in Butter
Add the unsalted butter, cut into small pieces, to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Combine Wet Ingredients
In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the mixed berries, being careful not to overmix.
Shape and Cut Scones
Turn the dough out onto a floured surface and pat it into a circle about 1-inch thick. Cut into wedges or use a round cutter to shape the scones.
Bake the Scones
Place the scones on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.
Cool
Remove from the oven and allow to cool slightly on a wire rack.
Whipped Honey Butter
Soften Butter
In a mixing bowl, allow the unsalted butter to soften at room temperature until it is easy to mix.
Mix Ingredients
Add the honey and sea salt to the softened butter. Beat with a hand mixer or a whisk until the mixture is light and fluffy.
Serve
Transfer the whipped honey butter to a serving dish and serve alongside the freshly baked scones.
