Prepare the Vegetables

Slice the green and red bell peppers, onion, and mushrooms (if using) into thin strips.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the sliced peppers, onions, and mushrooms. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Season with salt and black pepper.

Cook the Steak

In the same skillet, push the sautéed vegetables to one side and add the shaved steak. Cook for about 3-5 minutes, stirring occasionally, until the steak is cooked through and browned.

Melt the Cheese

Once the steak is cooked, reduce the heat to low and add the cheese over the steak and vegetables. Cover the skillet for a minute or two until the cheese is melted.

Assemble the Sandwich

Split the hoagie rolls and fill them with the steak and vegetable mixture. Serve immediately with your favorite condiments.
