Prepare the Dry Rub

In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, ground black pepper, and salt.

Season the Steak

Rub the dry rub mixture all over the ribeye steaks. Let the steaks marinate for at least 30 minutes at room temperature.

Caramelize the Onions

Slice the onions and heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Set aside.

Prepare Creamy Spinach

In the same skillet, add another tablespoon of olive oil and sauté the spinach until wilted. Lower the heat and stir in the cream cheese until melted. Add the heavy cream and grated Parmesan cheese, stirring until smooth. Season with salt and pepper to taste.

Grill the Steaks

Preheat the grill to high heat. Grill the ribeye steaks for about 4-5 minutes per side for medium-rare, or to your desired doneness. Remove from the grill and let rest for 5 minutes.

Serve

Plate the grilled ribeye steaks with caramelized onions and creamy spinach on the side. Serve with your choice of side.
