Method
Make the House Raspberry-Sage Syrup
Cook syrup
Combine fresh raspberries, granulated sugar, and water in a small saucepan over medium heat. Stir frequently and bring to a gentle simmer. Cook 6–8 minutes, mashing the raspberries with the back of a spoon to release juices, until the sugar is dissolved and mixture is fragrant and slightly thickened.
Infuse sage
Remove the saucepan from heat. Add 4 of the sage leaves to the hot syrup and steep for 8–10 minutes to infuse a bright, herbaceous note. Taste after 8 minutes and steep longer if you prefer stronger sage.
Strain and cool
Strain the syrup through a fine mesh sieve into a heatproof container, pressing on the solids to extract as much syrup as possible. Discard solids. Let the syrup cool to room temperature, then refrigerate until chilled. Yield: about 5–6 oz syrup.
Build the Cocktail
Lightly muddle: In a mixing glass or cocktail shaker, place 2 fresh sage leaves. Gently clap them between your hands to release aroma, then lightly muddle them once or twice — just enough to bruise the leaves and release oils without shredding them and creating bitterness.
Add liquids: Add 1.5 oz chilled raspberry-sage syrup, 2 oz fresh orange juice, and 0.5 oz fresh lime juice into the mixing glass with the muddled sage. Fill the shaker or mixing glass halfway with ice.
Stir and chill: Stir gently for 10–15 seconds (or roll between two tins) to combine and chill. This drink is lightly carbonated so avoid vigorous shaking to preserve texture.
Top with soda: Gently top with 3 oz club soda. Give a single gentle stir just to incorporate—do not overmix to keep fizz.
