Preparation of Fish
Slice the Salmon
Using a sharp knife, slice the fresh salmon fillet into thin sashimi-style pieces, approximately 1/4 inch thick. Arrange them artfully on a chilled plate.
Lychee Ginger Zu
Make the Lychee Ginger Zu
In a blender, combine the peeled lychee fruit, grated ginger, rice vinegar, soy sauce, and sesame oil. Blend until smooth. Adjust the seasoning with more soy sauce if needed. Pour the mixture over the sliced salmon.
Myoga Relish
Prepare Myoga Relish
In a small bowl, combine the thinly sliced myoga ginger, lemon juice, chili flakes, and salt. Mix well and set aside to let the flavors meld.
Seasonal Fruit
Prepare Seasonal Fruits
Diced mango, sliced strawberries, and diced kiwi should be combined in a bowl. Gently toss to mix and place them around the salmon on the plate.
Assembly
Assemble the Dish
Drizzle the lychee ginger zu over the salmon and top with the myoga relish. Garnish with seasonal fruits on the side. Serve immediately for the best flavor and presentation.
