Pancake Preparation
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cook Pancakes
Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Tofu Preparation
Press the Tofu
Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture for about 15 minutes.
Marinate Tofu
In a bowl, combine soy sauce, sesame oil, garlic powder, ground ginger, and black pepper. Cut the pressed tofu into cubes and add to the marinade. Let it sit for at least 30 minutes.
Cook Tofu
Heat a non-stick skillet over medium-high heat. Add the marinated tofu and cook until golden and crispy on all sides, about 8-10 minutes.
Curry Ketchup Preparation
Mix Ingredients
In a small bowl, combine ketchup, curry powder, coconut sugar, and lime juice. Stir until well mixed and set aside.
